DRYING CELERY


   Trim the stalks, then  wash  both the  stalks  and leaves
thoroughly.  Slice the stalks and  then blanch them in steam
or water for 3 minutes.  Dry 4 to 8 hours in a dehydrator or
4 to 6 hours in an oven.
