FREEZING CAULIFLOWER
Choose firm, tender, snow white heads. Break or cut into
pieces about 1 inch across. Wash well. If necessary, to
remove insects, soak for 30 minutes in a solution of salt
and water (1 cup salt to each gallon of water). Drain.
Water blanch medium size sections for 3 minutes and
large sections for 4 minutes. Cool promptly in cold
water and drain.
Pack cauliflower into containers, leaving no headspace.
Seal, label and freeze.
